Around 35 years ago, Columbia resident John Alspaugh had an idea to grow and share with farmer’s market patrons, the best tasting apples in town. Not knowing exactly which apples would both grow well and taste great, he set out to plant a variety trial orchard where he could taste test the myriad of apple varieties available to growers. His dream has become, so many years later, a living library of heirloom apples that one doesn’t find many places.

We at Waves have had the pleasure and privilege in 2020 to harvest and press approximately 2200 lbs of the best quality apples from John’s orchard. 30 different varieties of aromatic, juicy, sweet and tart apples were pressed and blended together. Fermented and aged in stainless steel for one year, then bottled and refermented in said bottle for another 10 months.

The Alspaugh Orchard Blend is an homage to John’s legacy and love of the humble but mighty apple. It’s bursting with aromas of ripe apples and following through with clay and limestone minerality. It finishes dry and grippy with subtle lemon notes.
